Now don't faint...I actually found a watermelon dish I could love. I will give you the recipe but you will have to be brave to try this one. I was actually working and waiting for my appointment to call on a doctor and his waiting room was FULL. During my 2 hour wait, I watched the Medical Television program that was playing. The demonstration was for 2 healthy fruit-veggie salads and I was intrigued. So here goes:
Cut up 3-4 cups of watermelon, seedless or seeded
Add 2 cups of feta cheese, broken or cut into pieces
Add several slices of thinly sliced red onion
Add chopped parsley, about a 1/4 cup
Add chopped mint, about 4-5 leaves
Add 1/4 lime juice, fresh if you have it.
Toss and serve to the brave.
This has such an unusual flavor, sweet, salty, minty and sour.
Here is the other recipe:
Cut up 1 or 2 mangoes
Add 1-2 cups of cherry tomatoes, halved
Add several slices of thinly sliced red onion
Add 1/2 - 1 cup greek olives or black olives
Add chopped basil, about 5-6 leaves
Add about 1/3 cup apple cider vinegar
Toss and serve.
This one is really good too. I think there may be some adventurous ones that may try these.

I had the rare experience of my son actually letting me take his picture
this afternoon.
Usually, he will:
A. Run away.
B. Put his hands in front ...

Well, Jo, in keeping with this theme, let me share a watermelon recipe that we came across that I think you may enjoy as well. I will post it on my blog. It is sweet and savory (which I know how much we enjoy savory foods).
