I love this palm tree. I planted it as a little plant about 5 years ago and now it is taller than me. I noticed it had an unusual addition of "fruit" this summer...





Yes, that is a corn cob. It seems it is a good hiding place for our resident squirrels.

I can eat watermelon!!

Now don't faint...I actually found a watermelon dish I could love. I will give you the recipe but you will have to be brave to try this one. I was actually working and waiting for my appointment to call on a doctor and his waiting room was FULL. During my 2 hour wait, I watched the Medical Television program that was playing. The demonstration was for 2 healthy fruit-veggie salads and I was intrigued. So here goes:

Cut up 3-4 cups of watermelon, seedless or seeded
Add 2 cups of feta cheese, broken or cut into pieces
Add several slices of thinly sliced red onion
Add chopped parsley, about a 1/4 cup
Add chopped mint, about 4-5 leaves
Add 1/4 lime juice, fresh if you have it.
Toss and serve to the brave.

This has such an unusual flavor, sweet, salty, minty and sour.

Here is the other recipe:

Cut up 1 or 2 mangoes
Add 1-2 cups of cherry tomatoes, halved
Add several slices of thinly sliced red onion
Add 1/2 - 1 cup greek olives or black olives
Add chopped basil, about 5-6 leaves
Add about 1/3 cup apple cider vinegar
Toss and serve.

This one is really good too. I think there may be some adventurous ones that may try these.

Newest Addition


Well, it's not a new grandchild, though with 5 arriving since January 2008 you would be forgiven if that's what you thought. This new arrival is of the metallic kind...it is Scott's new ride, a 2006 Jeep Wrangler. He is very proud of his new baby and I think it looks like him. Take a look...

Quiet time


Well, Gigi is having fun in Florida, visiting with Sarah and David and Dave. I am glad to hear that Dave is having great success in his job! I understand David is just delighting his parents with every coo and giggle.




It is very quiet here tonight with just Daisy and Buddy running through the house. They cannot wait for bed time. I thought I would try to post some pics of the grands. Everyone is growing so fast. I am glad that Sabrina and Mike took the extreme effort to make the trip and stop in to see the Coopers before coming to the resort. We did have a wonderful time.

It's an amazing thing when your children grow up and become your friends. It's no small thing to realize all the failures you had as a parent and still see what wonderful people your children have become. My hat's off to you!!!

Away to Florida

Today Marty received a call from a friend at work and was asked if he wanted to go along on a trip to Florida. He could not get the cell phone closed fast enough...the suitcase came out, shorts, tees and swim suits went in and they were on the road within the hour. What a spontaneous guy! Look out Sarah, Dave and David...Gigi is on his way and will be there for several days. Cousin Al, watch out, the Kapusta head will probably show up at your door.

The Holiday



The pool was open, the sun was hot, the food was plentiful, the firecrackers were lit...and a good time was had by all. That Adam is a happy boy...who wouldn't love that grin?



Zach was occupied with trains and cars when he wasn't swimming or watching Blue's Clues.








Even the doggies enjoyed the holiday.
The main topic of conversation (besides the boys) was the book DOCTOR MARY'S MONKEYS.
This concerns events in New Orleans in the 1950s and 1960s and ties together the polio vaccines, cancer research and viruses, a puzzling death/murder, Lee Harvey Oswald, Cuba, and the JFK assasination. Sabrina is reading the book now and will forward on to the next interested party. It is a quick read even with all the detail.
We missed everyone else that could not visit during the holiday. We hope you had a great celebration and thought of the Independence we were given by our founding fathers. Give some consideration to the liberties we have in the Constitution and Bill of Rights. Freedom isn't free...it comes with a great cost.
